Bananutella "Pancrepe"


Bananutella is basically the couple name of a dynamic duo.  Sliced banana + creamy, rich, ooey-gooey Nutella? Yes, please.  This culinary power couple also saves my lazy superdy-duper-easy version of crepes.  You see, one day I decided I was inspired to make crepes.  Then I remembered there was pancake mix in the pantry... which only required me to add water.  You got it!  I went for the pancake mix.  After all, crepes are basically super thin pancakes right?! Maybe. Right! But really, the sliced banana atop the silky, sticky Nutella topped with cappuccino whipped cream is delicious.  I have even heard someone say he would rather have this at his wedding than wedding cake.  So yeah, you can see this dessert as a knock off crepe, OR you can close your eyes, take a bite, and decide that these are some pretty darn good sophisticated pancakes. It's your choice. *insert innocent sweet smile*

Bananutella Pancrepe Recipe

Ingredients:

Pancrepes:
- 1/3 cup Krusteaz pancake mix
- 1/3 cup + 1/2 tbsp water 

Toppings:
-1 cup heavy whipping cream 
-1 tbsp cappuccino powdered drink mix 
- extra cappuccino powder for garnish (optional)
-3 tbsp powdered sugar

- Nutella
- 2 bananas

Extra stuff:

Vegetable or canola oil

Directions:

1. Mix the pancake mix and water together.  Try to get the mixture as smooth as possible.  I like stirring it with a little ladle.  The shape of the ladle makes it easy to break those little flour clusters against the bottom of the mixing bowl. 

2.  Put a non-stick pan on the stove.  Turn on the heat to medium.  Brush the pan with the oil and pour a little-ladle-full of the batter onto the stove.  Spread the batter in the pan by moving the little ladle in circular motions.  When you see that the top of the pancrepe is almost completely dry, flip it over.  Smoosh it with the spatula.  Let cook for about another 30 seconds.  

3. Transfer the pancrepes onto a plate as the finish cooking.  When all are cooked, place them in the fridge to cool.

4. Prepare the cappuccino whipped cream.  Pour the heaving whipping cream into a bowl.  Add the powdered sugar.  Use the whisks of your turned-off hand mixer to push the sugar into the cream.  (This is just so that when you start whisking, the sugar won't fly everywhere.)  Turn your hand mixer on to HIGH and mix the cream until you reach stiff peaks or until you start to get lumps in the cream.  Fold in the instant cappuccino powder.

5. Assemble


Spread Nutella on each of your pancrepes.  Slice the two bananas into about 14 pieces each.  Place a layer of banana slices on one pancrepe.  Spread 1/4 of your whipped cream onto the banana slices.  Place another pancrepe onto the whipped cream and repeat the same process until you have a stack like in the picture below.  Garnish with extra banana slices & sprinkle with cappuccino powder, if you desire.
